ROASTED CHICKPEA SALAD – PHASE 2bianca.l
80 grams boiled chickpeas
1 tomato chopped
1/2 cucumber chopped
1/2 red onion chopped
Salt to taste
Red chilli powder to taste
Coriander to taste
Lemon juice to taste
Preheat oven to 180 degrees Celsius.
Mix Chickpeas, salt, chilli powder, coriander and lemon juice together in a bowl.
Place on a lined oven tray and bake in oven for 15 minutes or until chickpeas are roasted.
Allow to cool.
Once cool mix with salad ingredients and serve.
Dress with extra lemon juice, if required.
