PASTA SAUCE / BOLOGNESE – PHASE 2 AND 3

INGREDIENTS 80 grams – Tomato Paste 3 Tablespoons – Apple Cider Vinegar 1 Tablespoon – Lemon Juice 1/4 teaspoon – Celery Salt 1/2 teaspoon – Paprika 1/4 teaspoon – Mustard Powder 1/4 teaspoon – Onion Powder 1/4 teaspoon – Garlic Powder Tiny Pinch – Nutmeg Tiny Pinch – Clove Stevia to taste DIRECTIONS Dissolve spices in the vinegar and lemon juice. SWEET CHILLI SAUCE – PHASE 2 OR 3

INGREDIENTS 1 onion 2 tomatoes 2 tsp garlic 1-2 Tblsp chilli flakes 3 Tblsp stevia 1 1/2 Tblsp apple cider vinegar Salt and pepper to taste 200-250ml water DIRECTIONS Cook onion, tomatoes and garlic in a pan. Add dry ingredients and cook in. Add 200ml water and apple cider vinegar and simmer until desired consistency. Add more water, if you like it more runny. Remove from the heat. VIETNAMESE CHICKEN MEATBALLS WITH DIPPING SAUCE – PHASE 2

INGREDIENTS FOR VIETNAMESE CHICKEN MEATBALLS 100 very lean chicken mince Finely chopped shallots Chopped coriander Grated ginger Grated lime rind 2 x teaspoons of fish sauce DIRECTIONS FOR VIETNAMESE CHICKEN MEATBALLS Mix all ingredients together, section into little balls, bake in oven at 170 degrees for 15-20 minutes. INGREDIENTS FOR DIPPING SAUCE Mix together - 2 tablespoons apple cider vinegar, 1 tablespoon lime juice, 1 tablespoon fish sauce, 1 tablespoon stevia. Serves 1 By Alissa Walsh

COTTAGE CHEESE PANCAKES & ONION MAYONNAISE – PHASE 2

INGREDIENTS 100 grams low fat cottage cheese Roasted cumin Roasted green chilies Chopped ginger Chopped roasted cabbage or spinach Salt 2 powdered melba toasts DIRECTIONS Mix all the ingredients. Make small pancakes with Hands and roast on non stick pan till golden brown. Serves 1 ONION MAYONNAISE 1 onion 2 green chilies Salt Lemon or gooseberry 1 or 2 2 garlic cloves 1 tsp market low fat cottage cheeseTake all the ingredients in a grinder and grind till smooth paste. Once the paste is formed add market cottage cheese. Refrigerate for sometime and serve with pancakes. By Ankita Jain

HOME MADE CURRY PASTE – PHASE 2

INGREDIENTS 4 cloves of garlic 1 thumb size piece of fresh ginger 1 tablespoon paprika 1 teaspoon smoked paprika 2 teaspoons garam masala 1 teaspoon turmeric ½ teaspoon sea salt 1 fresh red chilli 2 teaspoons cumin seeds 2 teaspoons coriander seeds 1 teaspoon black pepper DIRECTIONS Chop up roughly and add all ingredients to hot pan to dry fry for a few minutes to activate the spices. Once It’s lightly toasted, transfer to a blender and add 3 tablespoons of tomato paste and puree Easy peasy You could add water to make it more wet but I was putting mine in slow cooker with beef stock so didn't bother By Kylie-ann Tighe
