MINI BURGERS – Phase 2

INGREDIENTS 80 grams of mince 1 tbsp mixed seasoning 1 egg white 3 slices of onion 3 slices of tomato DIRECTIONS Mix the mince, seasoning, and egg white together. Separate the mixture into three little patties and fry in a non-stick pan until cooked. For this step, do not use oil, you can use water instead or bake them in the oven on a baking tray. Once they are ready, place the tomato, onion, and mince patty on top of each other and serve.

MINI MEATLOAVES – PHASE 2

INGREDIENTS 1kg super lean beef mince 6 melba toast (grounded up fine) 1 tbsp soy sauce 2 tbsp sugar free tomato sauce (Heinz has a reduced sugar ketchup and tomato sauce) 1 tsp salt, pepper and garlic salt to taste. about 1 tsp each 1 cup of small chopped tomato   DIRECTIONS Mash together all of the ingredients and press the mixture into 100 gram mini loaves. Bake for half an hour at 350 degrees celsius or grill until toasty....DELICIOUS !   Note: I always put a wee bit of Heinz reduced sugar ketchup on the top in the end. You can also serve it with bok choy asparagus, or broccoli...

MINI BEEF KOFTAS WITH ROASTED TOMATOES, ONIONS AND LETTUCE – Phase 2

INGREDIENTS 100g lean beef mince 1/4 brown onion - finely diced 1/4 tsp dried coriander 1/4 tsp paprika 1/4 tsp ground cumin 1/4 tsp ground cinnamon 1 tomato 1 red onion Note: All spices can be added to suit your tastes. DIRECTIONS Mix all the ingredients together in a bowl until they are well combined. Form mince mix into small log shapes. Place them on a tray and oven bake until they are cooked to your liking. Cut tomato and red onion into wedges, then lay them on a tray and sprinkle with salt and pepper before baking them until cooked. Serve on a bed of lettuce.

MINCED DELIGHT – Phase 2

INGREDIENTS 100g of ground beef (or very lean mince) Garlic 3 cherry tomatoes Beef stock Black pepper Water Asparagus Spinach     DIRECTIONS: Boil some water then drop in the garlic and tomatoes. Boil them until they become soft, then add the ground beef, stock powder, and pepper; cook it until ready. While waiting for the beef, boiled some asparagus and spinach to serve on the side.

MINCE AND TOMATO – PHASE 2

INGREDIENTS 100g of 5 star mince 2 garlic gloves 2 cups of chopped up home grown tomatoes 1 onion DIRECTIONS Cook mince in a pan with no oil, then add onion and garlic, followed by the tomatoes. Simmer the mixture until the tomatoes have fallen apart. Then serve as a light lunch (yummo). I had this with three mini/melba toasts.

GARLIC & BLACK PEPPER BEEF – Phase 2

INGREDIENTS 100g lean steak (cut in strips) 1 small brown onion (chopped) 1 stick celery (thinly sliced) 1 cup green cabbage (shredded) 1 cup stock or water Dash of gluten free soy Onion powder Garlic to taste Black kibbled pepper to taste   DIRECTIONS Heat the pan and add onion and celery, then cool until it begins to become tender. Add the beef strips to the pan and seal. Then, pour in the stock or water and soy. Simmer until the meat is cooked through. To thicken the mixture slightly, sprinkle onion powder, then add cabbage and cook to your liking.

BEEF TACO – PHASE 2

INGREDIENTS 100 grams of mince (or a larger serving for the whole family) Diced tomato Diced onion Diced some celery     DIRECTIONS Pan fry with water, salt, pepper and beef stock some very lean mince. Add the tomato, onion, celery to the mix (keep adding water). Use salt pepper and herbs to taste as well as more beef stock if require. Then serve on lettuce leaves. For other members of the family, they can have the real tacos if they want them.

BEEF RISSOLES – PHASE 2

INGREDIENTS 500g lean beef mince 1 small onion (diced) 1 tsp garlic 1 tsp curry powder 1 tsp dijon mustard 2 tsp sugar free tomato sauce Salt and pepper Serves: 5   DIRECTIONS Mix all ingredients in a bowl then form into 10 even sized patties. Bake in oven at 180 degrees celsius until cooked - only turn once. Serve with salad or vegetables. Otherwise, you can make a batch and freeze them for easy lunches and/or dinners for the week.

BEEF ENCHILADA – Phase 2

INGREDIENTS 1 tbsp water 1 tbsp onion (minced) 1 clove garlic (minced) 1/2 can diced tomatoes 1/2 tsp basil 1/2 tsp oregano 1/2 tsp chili powder 1 tsp cumin 85g beef or chicken (cooked and shredded) DIRECTIONS Saute onion in water for about 2 minutes. Add garlic and saute for one more minute. Add diced tomatoes and spices, mix and let simmer for 5 to 10 minutes. Mis in cooked, shredded beef or chicken and continue to let the mix summer for a few more minutes to heat the meat. Then, serve with a big salad or veggie on the side and have a great meal. Note: Well, obviously it isn't a "real" enchilada, since...

BEEF AND CABBAGE STEW – PHASE 2

INGREDIENTS 200g lean beef mince 2 cups cabbage (shredded) 1 small onion (sliced) 1 tsp onion powder 1 tsp garlic powder 400g diced tomatoes (canned) 2 tsp apple cider vinegar 1/2 tsp cinnamon 1 tsp stevia 1/2 cup water Salt, pepper and cayenne pepper to taste Serves - 2 DIRECTIONS Heat a pan and brown mince and onion. Add onion powder, garlic powder, cinnamon, salt and pepper. Add diced tomatoes, water, apple cider vinegar and stevia. Simmer for 10mins. Add cayenne pepper to taste. Add cabbage, cover and simmer until cabbage is cooked to your liking. Serve.
