RED ONION BHAJIS WITH MINT RAITA– PHASE 2
INGREDIENTS
120 grams chickpea flour
1/2 teaspoon baking powder
1 teaspoon chilli flakes
2 teaspoons curry powder
1 teaspoon ground coriander
1 teaspoon turmeric
2 cloves garlic – crushed
2 teaspoons ginger
Salt and pepper to taste
1 red onion – finely chopped
MINT RAITA
1 tablespoon Greek yogurt
chopped mint to taste
Garlic to taste
DIRECTIONS
To make raita mix all ingredients together and set aside.
To make the Bhajis, sift the chickpea flour and baking powder into a large bowl.
Add the spices, garlic and ginger and season with salt and pepper.
Add 150 ml cold water to make a thick batter, then add the onion and stir until it is well coated.
Heat a nonstick pan on medium heat.
Cook mixture into 12 even sized Bahjis.
Serve hot with raita.
