TOMATO AND SHALLOT OMELETTE – PHASE 2Jess Arroyo
1 whole egg
3 egg whites
1 tomato – sliced
1/2 cup shallots – sliced
Salt and pepper
Whisk eggs together and season with salt and pepper. Set aside.
In a non stick pan, lay sliced tomatoes. Cook until tomato becoming tender.
Add sliced shallots to egg mix.
Pour egg mix over tomatoes. Cook until egg starting to set on the bottom.
Put pan under the grill and cook until all egg is cooked.
Serve and enjoy!!!!
