TARAKIHI STUFFED CAPSICUM – PHASE 3
INGREDIENTS
1 tarakihi fillet
1/4 chopped onion
1 tablespoon grated fresh ginger
1 teaspoon cumin
1 stalk lemongrass
1 teaspoon tamari
1 tablespoon olive oil
1 capsicum cut into quarters
2 tablespoons fish stock
DIRECTIONS
Place all ingredients (except oil and capsicum) into food processor and blitz until it becomes a thick paste like texture.
Spoon mixture into capsicum.
In pan heat oil. Place stuffed capsicum fish side down on medium heat for about 5 minutes.
Once fish is cooked turn over with capsicum side down and heat thru a few mins.
Place a couple of tablespoons water into the pan. Cover with lid to allow to steam for 2 mins.
Serve hot.
