MINI BEEF KOFTAS WITH ROASTED TOMATOES, ONIONS AND LETTUCE – Phase 2

Mini beef koftas served on a bed of lettuce

INGREDIENTS

100g lean beef mince
1/4 brown onion – finely diced
1/4 tsp dried coriander
1/4 tsp paprika
1/4 tsp ground cumin
1/4 tsp ground cinnamon
1 tomato
1 red onion

Note: All spices can be added to suit your tastes.

DIRECTIONS

Mix all the ingredients together in a bowl until they are well combined.
Form mince mix into small log shapes. Place them on a tray and oven bake until they are cooked to your liking.
Cut tomato and red onion into wedges, then lay them on a tray and sprinkle with salt and pepper before baking them until cooked.
Serve on a bed of lettuce.
