CREAMY TOMATO SOUP – PHASE 2Jess Arroyo
2 cans diced tomatoes
1 litre vegetable stock
400g reduced fat cottage cheese
1 onion – rough chopped
2 sticks celery – rough chopped
2 tsp garlic
Salt and pepper – to taste
Heat a pan and add onion, celery and garlic with a small amount of stock.
Cook for 5 minutes or until vegetables start to become tender.
Add tomatoes and stock. Bring to the boil. Reduce heat and simmer for about 30 mins.
Turn off heat and add cottage cheese.
Blend til smooth.
Season to taste.
