BROWN LENTIL BOLOGNAISE – PHASE 3

INGREDIENTS

1/2 cup brown lentils soaked overnight
3 cloves garlic chopped
1/2 onion chopped
6 chopped tomatoes or 1 can tomatoes
3/4 cup chicken stock
1 bay leaf
Salt to taste
1 tablespoon olive oil

DIRECTIONS

In nonstick pan heat oil.
Fry garlic and onion till translucent.
Add the lentils, tomatoes, bay leaf and stock.
Simmer on low heat for approx 20 mins.
Add salt to taste.

Serves 2
