BAKED VEGETABLE PAKORA– PHASE 2bianca.l
240 grams chickpea flour
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons garam masala or curry powder
1 ½ teaspoons cumin
½ teaspoons turmeric
½ teaspoons crushed red pepper
½ teaspoons garlic powder or 2 cloves fresh, crushed garlic
Zucchini – grated as desired
Onion – sliced as desired
Spinach – as desired
Preheat oven to 260C.
Cover a tray in baking paper or have a large nonstick tray ready.
In a large bowl, mix together dry ingredients.
Stir in enough water to create a batter, almost pancake-batter consistency, but a little thicker.
Let batter sit.
Prepare veggies and then dump them all into the batter, mixing well to coat.
Use a dessert spoon and spoon the mixture onto your lined tray.
Bake for 8-9 minutes, then flip and bake another 10 minutes, until golden brown.
